All the way from Colombia, La Falda is this season's marvellous decaf coffee. Unlike a lot of decaffeinated coffees, the processing method behind this coffee is really rather special as it happens in the very same country it has been grown in. This method is called Sugarcane (or EA for the coffee-buffs out there).
The sugarcane method works by soaking the green coffee in a water bath containing ethyl acetate (which is naturally derived from fermented sugarcane) and then removed from the water bath and steamed in order to remove any residue. Once dried, the resulting coffee has lost almost 99.9% of its caffeine content and still tastes just as brilliant.
