Indonesia has always had a special place within the sourcing of green coffee for Rum Baba.

Searching for the potential quality that Indonesia can offer. This might be the most extreme example of what this country can offer!

Lot Edun is part of the result of a collaboration involving Wildan, the farmer, which started in 2019 on a small scale. Over the years the volume of batches of experimental fermentations increased following their success. The goal was to develop unique processing techniques that can be replicated consistently over time and on scale, without adding enormous production costs.

The goal of this specific lot was to create a cleaner, brighter anaerobic profile that had less wildness and more sophistication. Expect a clear profile with an overdose of ripe fruit.
The coffee varieties include the Sigarurutang, Andungsari, Timtim, Ateng super and Borbor. Picked between 1300 and 1500 masl. These went through extended natural fermentation of 3 days.

The name, Edun, means “crazy”. Like how you would describe a positively crazy person, event or object in Bahasa, the local language.
