Altos de Erapuca is 21 hectares of pure red catuai, and sits at 1300 masl. The farm has been producing specialty coffee for a number of years, but with a focus on large volumes of washed coffee. This year Carlos started to produce micro-lots.

After some trials with processing cherries from Carlos' farm, the technical staff at Aruco found that macerating the cherries and processing them as a natural gave the best results. The cherries were picked and delivered to the Aruco mill, where they were sorted and cleaned before pre-fermentation. The organic certified cherries were macerated in tanks for 48 hours before being placed on raised beds to dry.
