Adrubal returns for its second year with us, and once again we are amazed by the quality of Carlos’s production. Extra ripe Catuai cherries are handpicked before being delivered to Carlos’s son Jacob, who handles all the processing of the coffees. The cherries are placed in thin layers on raised beds and moved constantly for the first week to avoid over-fermentation, then moved less frequently for a further 3 weeks until they reach an optimal moisture content. Carlos and Jacob leave the now dried cherries in bags for at least a month before taking them to the dry- mill, this is where they believe their coffees develop the unique flavor intensity that we know them so well for.
