This coffee is produced in Gualme, Corquin Copan. Gualme is a relatively high altitude area which greater temperature swings and higher humidity, this means that the coffee has a pronounced acidity and greater complexity, but makes it a challenging environment to dry coffee.
Joman Walter Lara is a young coffee producer, who has produced coffee all thru his life having always the full support of his father Don Oliverio. For him, to be involved in the project to produce speciality coffee has been a very special experience, due to the fact he has had the opportunity of to meet people from around the world and realise that here, in Honduras they can produce a high-quality coffee. With that in mind, Joman has invested in his farm and knowledge to be able to part of the micro-lot programme with Aruco. This has led him to take care over his crop and looking at all the small steps in producing high-quality ripe cherry.
