This particular lot is chosen from lots brought by five smallholder growers in the department of Cauca which includes the villages of El Cerrito, Rio Blanco, Rio Sucio, and Uribe.
The coffee is picked and de-pulped the same day, fermented dry for 16–20 hours, and washed three times before being dried in parabolic dryers.
The beans are naturally decaffeinated using the sugar cane process, which involves steaming and washing with ethyl acetate from fermented sugar cane.
