Coffee Facts

Maynor is a second generation farmer who lives with his wife and 2 children in
the small Cipresales community outside San Antonio Huista. He learned to farm
coffee from his father, who taught him about tending to the coffee trees and then
passed the land down to him. The name El Portrero means “pasture” and comes
from the first use of the farm for livestock, before they began to cultivate coffee
there in 2004.

Maynor has invested in his wet mill, and he processes coffee from 3 pickings per
year. The coffee ferments for 24 hours and then is washed; he soaks it in clean
water for 5 hours more before drying on the patio. The second soak gives the
coffee a beautiful clarity in the cup.
