Coffee Facts
This lot comes from the Hulia region of southwest Colobia. The region of Hulia encompasses part of the Andes mountain range as well as the Magdalena Valley. This variation in elevation creates one of the country's most unique areas of coffee production for terroir, climate and harvest cycles. This particular lot utilises the Ethyl Acetate method of decaffeination. Ethyl Acetate is a naturally occurring ester, a by-product of Bananas and fermented sugars. The coffee cherries are steamed in order to open their pores, and then submerged in a solution of Ethyl Acetate that acts as a solvent, bonding to the caffeine molecules in the cherries. This process is repeated over 8 hours until the caffeine levels are no longer detected, then the cherries are fully ashed to remove the final traces of Ethyl Acetate.
