Coffee Facts
Each season, we travel to Colombia to visit the Huila Department, one of the best areas in the country for coffee plant growth and yields. Thanks to the relationship we forged with Elver, the compensation for the quality of their coffee now more than doubles what they received working with the commercial market. This has allowed them to invest in improving their facilities and building a new coffee dryer.
Their farm is located at the top of a hill where we must descend a very steep slope to reach their plantation. The landscape is spectacular due to the altitude and the large number of hills that are home to a wide variety of coffee. Elver has several blended varieties, although their farm primarily grows Bourbon and Colombian coffees.
After manual harvesting, the coffee is received for pulping of the cherries and fermentation in tanks. It is then washed and taken to the solar dryer, where it rests for approximately 20 days until the coffee reaches the appropriate moisture content.
