An impromptu meeting in Guatemala back in 2009 was the starting point of the Unica journey. Over the next decade and in various countries, El Paisa developed his knowledge, understanding and love of coffee.
However, it was not until late 2021 when the goal to become an independent roaster was realised. In short, our goal is to roast and provide high quality, unique, speciality coffee.
We aim to be as ethical as possible with an emphasis on sustainability and the farmers/producers, as we feel they are the real heroes of the coffee world. Of course, coffee travels thousands of miles, until it lands at our roastery cafe, where freshly roasted beans travel all of 2 metres to the espresso machine and finally into your cup of Única.
Whilst jars are our preferred method of packaging ‘return♻️reuse♻️repeat’, we also provide home compostable bags.
