How was the Roastery founded, what was the inspiration?

Sadry is originally from Lyon & Rose is a kiwi, we came back to France after six months in New Zealand where we ́d been working for the local coffee roaster. Keen to share NZ style specialty coffee in France, which at the time was still very old school, we set up our Roastery and first coffeeshop in Lyon. Mokxa, founded in 2011, is proudly considered a pioneer of the French specialty coffee movement.

What's your favourite part about working at the Roastery?

A part from travelling to origin and meeting the producers and tasting a lot of coffees, we have, since 2018 been offering other entrepreneurs coffee roasting training. We really enjoy sharing our knowledge with others and assisting them in their coffee ventures all over France and occasionally beyond.

What's your proudest accomplishment?

Honestly it would be on my patio in the morning sun. It would be hard to pick just one coffee but right now we are loving Colombian coffee which we brew each morning in our Moccamaster.

What’s your favourite place to enjoy a coffee, and what coffee would that be?

We started on a 15kg Giesen and just recently added a 22kg Probat to the workshop. We also have a 1kg Giesen for our training sessions and the small new 250grs Probat roaster for our sample.
