How was the Roastery founded, what was the inspiration?
It all began with an obsession to make the perfect brew. After many years and many more cups of coffee the obsession went far beyond the brewing method. We wanted to know: where did this coffee come from? What Happens during the roasting process? What gives the coffee its characteristics? Its important to think, not just how, but what actually makes the perfect coffee. What combination of elements, hard work and time has given you this product? This obsession is what set us on the mission to better understand the coffee industry, Thus Craft House Coffee was born.
What's your favourite part about working at the Roastery?
The variation and challenges of day to day work. Every time you roast coffee there is so much you need to take into consideration before you start. I love speaking with importers and our partners at origin about there challenges and how collectively we can overcome them.
What's your proudest accomplishment?
Never any awards, but my first coffee bought though our infrastructure projects made it into caffeine mag, that was kinda cool. To be honest, my proudest moments are always when people take the time to email me or my wholesale partners about how good the coffee is :-)

What’s your favourite place to enjoy a coffee, and what coffee would that be?
Sennen cove in Cornwall, possibly my favourite place on earth with a washed Colombian – something stone fruity.The tap water there is stunning and really highlight bright crispness in a cup.
Finally, what Dog & Hat combination would you choose?
Its all about a Shiba Inu with a top hat!
