Lee at Foundry speciality coffee roaster

How was the Roastery founded, what was the inspiration?

A hobby that got out of hand!  A passion for coffee was born years earlier and attempts to roast at home started an obsession with finding roasting perfection.  Before we knew it we had hatched a plan to buy a roaster and start an online business

What's your favourite part about working at the Roastery?

The peace and quiet, the ability to focus on the task of roasting coffee without distractions.  Even six years on, it remains a thrill to roast coffee and send it out to our customers knowing that we have done our very best for them.

What's your proudest accomplishment?

We were awarded 2nd best espresso in Brian's Coffee Spot awards a few years ago.  Brian travels the world trying out coffee and writing about it on his blog, so for us to be acknowledged by him from a cast of hundreds really means a lot.

What three words best describe your Roastery?

Small - Independent - Passionate.

What’s your favourite place to enjoy a coffee, and what coffee would that be?

In one of our coffee shops in the peaceful moments before we open.  It's always hard to choose a favourite but probably a washed Ethiopian or Kenyan brewed using the Hario V60.

Finally, what Dog & Hat combination would you choose?

A Boxer in a baseball cap. Obviously
