How was the Roastery founded, what was the inspiration?

Lex and I met at his previous cafe ‘Headfirst’ It was closed down and after the dust settled, he and I wanted to keep working together. We decided it was a good idea to start a roastery, but we didn’t want to have a chic specialty coffee brand. In the end Friedhats was borne. It’s an anagram of Headfirst, giving a wink to the past and it sounded a little ridiculous. We bought a secondhand Giesen 6kg and a few bags of green coffee and hired an old dirty garage.

What's your favourite part about working at the Roastery?

It’s the combination of things that makes this job endlessly interesting. Converting what you taste into a roast profile. Cupping coffees that are outspoken and unique. Figuring out how to print wirelessly from a PC to a printer on a Mac.

What's your proudest accomplishment?

Lex competed in the WBC and got second place in Amsterdam in 2018, that was quite something. We have created a roastery and cafe that produces great coffee and has great staff and is fun to work at.

It’s a filter, sitting in the sun on a cold day.
