How was the Roastery founded, what was the inspiration?
I worked as a journalist in Bolivia and loved visiting and writing about coffee farms. But the real inspiration to set up a roastery came from a family road trip to the West Coast of America where almost every small town has a small coffee roastery as well as a micro-brewery.
What's your favourite part about working at the Roastery?
Travelling to origin to build up long-term working partnerships with coffee farmers, cooperatives and exporters.
What's your proudest accomplishment?
My proudest accomplishment is definitely becoming a Q Grader in 2019.

What’s your favourite place to enjoy a coffee, and what coffee would that be?
We’re based on the Highlands of Scotland so definitely an aeropress on top of a ben (mountain). I would go for a bright Colombian washed coffee every time.
Finally, what Dog & Hat combination would you choose?
Right now it would have to be a Labrador wearing a face mask!
