How was the Roastery founded, what was the inspiration?

Heart & Graft Coffee Roastery was founded in 2015. James was roasting in his shed in Edgeley as the coffee circle, supplying local venues and people at home with delicious speciality coffees. I was working at a big commercial roastery as a taster/buyer. James wanted to build a roastery for a city the size of Manchester, I wanted to leave commercial coffee to work closer with flavour and high quality product. The rest if history and H&G was born.

What's your favourite part about working at the Roastery?

I love the fact that we get to work hands on with a wonderful product every day. I’m no office dweller and constantly need to be doing something practical or I just annoy anyone around me.

What's your proudest accomplishment?

Sounds incredibly cheesy but every time someone who maybe only drinks instant or low grade stuff tries a coffee of ours and says, “Yeah I get the difference now!”. Every time it makes me just feel incredibly proud. We haven’t got the faces for winning awards.

What three words best describe your Roastery?
Flavour - Passion - Approachability.
What’s your favourite place to enjoy a coffee, and what coffee would that be?

This is so difficult! Sometimes a solitary cup with time to think looking at a nice view is the best, maybe something complex like a natural Yirgacheffe. But then sometimes a cuppa with mates catching up anywhere is equally as good, then as long as the coffee is good it is made all the better by the conversations had.

Finally, what Dog & Hat combination would you choose?

I have a Staffie. Every dog owner says their dog is like family, Scooby is no exception. So in honour of him Staffie in a Trilby.
