How was the Roastery founded, what was the inspiration?

The company was founded in 2014, and I joined in 2016. The inspiration behind the company name, our long-standing house blend name (Timber Town), and company ethos came from a trip to America the owner took and spent a lot of time in a redwood forest and going kayaking.

What's your favourite part about working at the Roastery?

When you get the profile right and a coffee tastes just like you’d hoped it would when you first tried it in the cupping bowl.

    What's your proudest accomplishment?

    When I was 5 years old I hung out with Mark Hamill at a fancy 20th Century Fox party for The Empire Strikes Back. Nothing I can achieve in my adult life will ever top that.

    What’s your favourite place to enjoy a coffee, and what coffee would that be?

    Sat at home, feet up on the sofa whilst eating heavily buttered toast with Marmite. The coffee would be anything roasted by Dave at Crankhouse.

    What is your favourite snack or treat to have to accompany your coffee?

    We have a well-stocked biscuit tin at all times, I’m partial to a humble OG Hobnob. Meghan, our roastery manager, also bakes a mean brownie.

    What would you drink if there was no coffee?

    As long as there are still the ingredients to make a negroni in the world, I’d be happy.

    What is your favourite tasting notes to find in coffee?

    At the moment I’m quite into apples as a tasting note, and coffees that taste like sweets from a pick-and-mix.

    Where would you recommend for food and drink in your local area?

    Tough Mary’s Bakehouse for exceptionally tasty baked goods, Kushi-Ya for delicious Japanese cuisine, Cottonmouth for damn fine cocktails.

    Finally, what Dog & Hat combination would you choose?

    A Beagle in a Bonnet.
