Welcome to the Dog and Hat 4th birthday extravaganza and in this month's subscription we are celebrating upcoming / emerging origins from across the world of coffee.

Our goal is to break down your preconceptions of some of the lesser known coffee regions with both some amazing coffees and unusual processing methods.

To accomplish this, we will be taking you on a coffee journey across South East Asia and the Pacific Rim taking in China, Indonesia, Myanmar and East Timor.

Adding to the intrigue and mystery we also have Washed, Black Honey, and even a Carbonic Maceration (Anaerobic) processing method for you to try.

Rabbit Hole Roasters (Montreal, Canada) - China Washed

It's our 4th birthday box and we wanted to do something a little special again this year to celebrate... so we got in touch with the team over at Rabbit Hole Roasters in Montreal, Canada to see what we could do together

This is the second time we've had the pleasure of partnering with Sophie, David and the team across the pond and they were so well received last year when they became our first transatlantic roaster to feature in the main sub.

Now, so much has changed for Rabbit Hole in the last year, including moving out of their co-roasting space and into their own roastery at the back of Cafe L'Aspostrophe complete with their own Loring smart-roaster, as well as expanding their team when they hired Roxanne.

However, a lot has remained the same too including fighting important causes across the globe such as justice for the indigenous people of Canada, inequality and racism wherever it raises it's head and championing fairness and stability for coffee producers everywhere.

With all of that going on, it would be easy to overlook the coffee but they have that nailed down too.  This month we once again take a trip 'down the Rabbit Hole' with a washed coffee from China with notes of Cherry Bakewell (well, they say Cherry and Almond but we're going to keep pushing the Cherry Bakewell narrative until their change their labels :-D).

All our members will be receiving this omni-roast coffee.

Gold Box (Newcastle, England) - Indonesia Carbonic Maceration

Gold Box Coffee Roasters can be found up in Newcastle (and Dubai, but that is a story for another day) and the attention to detail they bring to every step of a coffee's journey is immense - from sourcing rare and interesting coffees directly from farms that Barbara has been dealing with for years to Erik roasting them to perfection.

You are in for a real treat with this coffee from Indonesia... now, I know what you're thinking - 'Indonesia?!?!?!?' but that's just going to taste earthy and heavy?... well, if that is what you're thinking you are in for a real surprise with this 87 point scoring carbonic maceration coffee from the Team Pegasing farm.

This is no ordinary Indonesian coffee, oh no, this coffee comes with huge Tropical Fruit notes with Caramel and a hint of Spice .

All our members will be receiving this perception changing coffee to enjoy.

Notes Coffee Roasters (London, England) - Myanmar Honey

When we used to travel down to London (and when we will be again soon, fingers crossed) we were spoiled for choice of coffee shops when we arrived in the Kings Cross area.

One of the cafes that vied for the title of 'Dog and Hat London Regular Coffee Shop' was Notes Coffee, opposite St Pancras Station... so we are very excited to have the chance to work with Fabio and his team this month.

This month their South London roastery will be filled with the wonderful smell of the Myanmar Pa-O Villages Black Honey processed coffee with floral notes of Black Cherry and Brown Sugar.

All our 3 and 4 bag members will be receiving this coffee.

Hard Lines Coffee (Cardiff, Wales) - East Timor Washed

It's been a while since we've crossed the River Severn and we thought it was about time we brought in another Welsh roaster for you to enjoy - so this month we are excited to introduce Hard Lines from Cardiff.

Hard Lines really do bring the fun to their coffee and we have been loving their 'face bags' for quite some time now.

The coffee we've chosen is their East Timor washed coffee with notes of Hazelnut Syrup and Strawberry.

All our 4 bag subscribers will be receiving this omni-roast coffee - so as they say in Wales... 'Iechyd da'!

Dialled In Traditional

Our traditional subscribers will be receiving Rabbit Hole's Monte Alban washed Mexico espresso roast coffee with notes of Molasses, Butter and Roasted Almond.

Alongside Rabbit Hole we have Notes Coffee and their Blackwall Estate espresso, which is currently a single-origin, honey-processed coffee from the Samaipata region of Bolivia with notes of Chocolate, Blackberry Jam and Vanilla.

Dialled In Decaf

For our decaf members, we will be sending out a Colombia E.A. Decaf from Rabbit Hole Roasters with notes of Panela, Cooked Apples, Nutmeg and Plum.

Alongside that we have Gold Box and their East Timor Swiss Water Decaf with notes of Raisin, Caramel and Biscuit.
