Ask the Roaster - Stephen from Lucid Coffee Roasters
How was the Roastery founded, what was the inspiration?
I founded the roastery at the beginning of 2022, having worked for Bailies Coffee for almost 8 years, I had felt it was time to move on an begin my own roasting journey. I love roasting and wanted a space where I can share what I love most, be in control and also being able to create opportunities for others, as well as getting to be involved with projects that are exciting to me. Lucid means to be express clearly, or easy to understand and this is exactly how specialty coffee should be.
What's your favourite part about working at the Roastery?
Well I am a one man band at the moment, so from sales, green buying, roasting, packing, dispatching and all the back end stuff, I keep myself busy! But just being able to do it and growing the company is my favourite at the moment.
What's your proudest accomplishment?
I suppose just being open, I was open a full year at the beginning of June, so to make it through the fist year is something I am very proud of. Also just finished 2nd in the UK roasting championships!

Approachable - Friendly - Delicious
What's your favourite place to enjoy a coffee, and what coffee would that be?
Probably first thing in the morning in my roastery, where I get a little time myself to brew and sit with a tasty coffee, usually anything at all, either my own or coffees from another roastery.
What is your favourite tasting notes to find in coffee?
I like vibrant, fruity coffees and either washed or natural. Love super complex coffees that offer a multitude of layers to the cup.
What what you drink if there was no coffee?
Probably more tea, It’s something I haven’t explored a huge amount, so if I had no coffee I’d have more time to delve into tea.
What snack do you like to eat with your coffee?
Donuts!
Where would you recommend for food and drink in your local area?
One of the best cafes for food, service and of course coffee is Napoleon Coffee in Belfast. They were (and still) my first wholesale account. But have always been renowned for their food, great customer service and amazing coffees.
Finally, what Dog & Hat combination would you choose?
Ooh my favourite dogs are Italian grey hounds and I’m 99% time wearing a backwards baseball cap, so that would be the combo! lol
