Ask the Roaster - John from Schot Coffee Roasters in Rotterdam
How was the Roastery founded, what was the inspiration?
The roastery was founded in 2011. I was working in the coffee industry as a coffee trader. Visiting many coffee producers in different origins and meeting very passionate people. I could hardly find any good coffee in our local area and decided to start my own roastery.
What's your favourite part about working at the Roastery?
My favourite part in the roastery is to get to work with the product on a daily basis: roasting, cupping, tasting, brewing. Finding new coffees, working with producers that work very hard to produce great coffee. It’s very rewarding to be able to brew all our coffees at our bar.
What's your proudest accomplishment?
I can’t highlight one specific thing. I guess it’s still to come! :-) It’s just been very rewarding to be able to spend a lot of my working life in coffee!
What's three words best describe your roastery?
It’s on our bags: Premium quality - Craftsmanship - Engagement
What's your favourite place to enjoy a coffee, and what coffee would that be?
Sitting outside in the morning sun with a mug of filter coffee. Doesn’t get much better than that.

What is your favourite tasting notes to find in coffee?
I generally enjoy a fruity / floral cup of coffee.
What what you drink if there was no coffee?
I cannot imagine a world without coffee…but would probably go for a good cup of tea in the morning and a nice beer in after 17:00.
What snack do you like to eat with your coffee?
Gevulde koek :-)
Where would you recommend for food and drink in your local area?
There are a lot of new places opening; personal favourites are Mecca, Coppi and Harvest Coffee & Bakery.
Finally, what Dog & Hat combination would you choose?
Shiba in a beret.
