El Diablo is a community blend from five smallholders around San Rafael del Norte, San Sebastián de Yalí and the Jinotega highlands, named for the nearby Cerro Datanlí-El Diablo reserve. Rather than buying finished green coffee, Caravela purchases it wet (parchment or cherry) and dries it centrally at their La Concordia facility. This runs against the usual speciality logic that producers should dry their own coffee to capture the value themselves — selling wet is normally how commodity buyers and "coyotes" exploit cash-strapped farmers, paying low prices and stripping out traceability. Caravela's version looks similar on the surface but flips the economics: they pay above market rate on delivery, the buying program is free to join, and they offer agronomic support through PECA, while retaining full traceability back to each producer.

The model also resolves a real tension between roasters' preference for slow, careful drying and the practical burden that places on farmers — extra drying space, labour, and constant attention — at a cash-flow cost many can't absorb, especially in a hot, dry origin like Nicaragua where better drying doesn't reliably earn a higher price anyway (it mainly avoids rejection rather than boosting the score). By centralising drying, Caravela removes that burden and risk from producers, secures a consistent, well-dried lot for export, and lets roasters get a reliable profile — an example of the "beneficio" model seen elsewhere in Central America, and one they'll be featuring in their spring/summer house filter rotation.
