We've always been interested in the science side of coffee here at Dog & Hat.

As we've just completed the SCA Brewing Professional accreditation we thought we'd write a blog series on some of the more important parts that relate to coffee brewing to help you get the most out of the Dialled In Filter Coffee Subscription.

This first part focuses on the science of the coffee bean.

It's really important to us here at Dog & Hat that we can provide the very best service to all of our members and one way that we look to achieve this is to invest in the highest quality training for the team.

Last year, we started the SCA (Speciality Coffee Association) Coffee Skills Diploma pathway and have already achieved the Intermediate level in Brewing, Barista Skills, and Sensory Skills.

This year we are working on the Professional level accreditations that lead to the final Coffee Skills Diploma.  This level of training allows us to standardise our coffee evaluation and selection process to ensure that every coffee that makes it into the subscription is truly the best we can find for you to showcase a particular origin, variety or tasting note.

This month we are bringing in two new roasters alongside two returning favourites and also debuting our 'Dialled In Dark(er)' sub.  For our new Dialled In Dark(er) subscription we are opening up with a strong pairing of the Wolfox 'Mr Wolf' blend (notes of Hazelnut and Honey, low acidity and a clean finish with hint of Cinnamon) and the Hundred House Coco blend (a chocolate bomb espresso, made for milk!)

For the coffee this month we’re bringing in 1 new roaster, 3 returning favourites, and a selection of 6 coffees from 5 different origins (plus 2 new origins for our decaf options) phew, its complicated, read on!

First up is our new roaster for the month – a lot of people have been asking for this one and we’re pleased to finally oblige.  So, everyone please give a warm welcome to Colonna Coffee from Bath.

The Coffee House Project #Bristol

Where to start?  I think we have to open with what an exceptional inaugural event the Coffee House Project (CHP) a.k.a. The Bristol Coffee Festival turned out to be - and I have to say well done to Louisa and Sofia for putting it together!

This was the first event that Dog and Hat have exhibited at and we chose Bristol as it's a hub for great coffee with such an amazing vibe.

Well there you go, it’s been a year and it feels great to reach the momentous milestone of our first birthday.  We’re more excited than ever to work in this fantastic and welcoming industry full of learning and opportunity. Every day we’re pleased we didn’t take the jam hamper route and instead wrote a list of everything we’re passionate about – which is mainly Dogs in Hats and good coffee!

It’s a BIG day for small business Dog and Hat!

Dog and Hat are extremely proud and pleased to announce that we have made it though from thousands of entries to become one of the Small Biz 100 for 2018.

Every year, the Small Business Saturday initiative is held on the first weekend of the December and this initiative is designed to encourage people to spend money with small business here in the UK, both locally and online.

The Small Business team also celebrates 100 small business in the 100 days leading up to the 1st December.  As one of the chosen 100, our celebration day is Thursday 13th September - so keep your eyes peeled.

Where else can you catch up with some of the roasters that have sent their wonderful coffee out to our subscribers, cup coffees from some of the biggest names in the game, rub shoulders with the coffee-glitterati and win a notebook from Square Mile whilst standing next to James Hoffman (who is remarkably tall, btw).

We’ve selected the coffee for February, and we think it’s got the most variety of any month we’ve put together so far… and it should certainly lead to some healthy conversation throughout the month :-)

To start with, we’ve finally managed to get Long and Short (a new roaster from East London) into the subscriptions with their Honey-processed Costa Rica ‘Don Chico’.  We were hoping to include them before Christmas with their amazing Panama (not a Geisha) coffee, but it just didn't work out - so we are very excited to get such a great all-rounder in this time around.
