We have a fantastic array of coffee for you to enjoy this month with a mix of new and returning roasters.

The coffee journey this month takes us from Peru at the top of South America through Central America taking in the flavours of El Salvador, Costa Rica and Honduras

Dialling-in some of these coffees from Friedhats was interesting and prompted me to ask a lot of people a lot of questions. The Colombia espresso and both filters we pretty much as expected, but the Brazil caught us out.

Welcome to December and of course, 'tis the season to be merry (and drink great coffee).

As has become a tradition here at Dog and Hat, this year's December Christmas edition of the subscription is again a showcase of all things Yorkshire.

This means that Dave gets the chance to drive a white van around the county visiting all our festive roasters and collecting the coffee... all while wearing his latest Christmas jumper (he really does get overly excited about at every opportunity he gets to drive a van, even more so at this time of the year).

The key to understanding a coffee competition is to be fully immersed in every aspect of it, from conception to the final presentation. Competitions take many forms both nationally and internationally, and to the uninitiated they are more than a little strange. 

Hi everyone, we hope you're enjoying the coffee again this month.

As we mentioned last month, it is becoming more common for the final production roast profiles for some of the more exclusive coffees we bring into the subscription to take longer to arrive with us.  This means that they often miss the deadline to get our booklet to print and we have started to put them here on the blog.

Each month we share our recipes for the coffee to provide you with decent starting point for dialling-in the coffee. Over time you should be able to work out your own grind settings that match ours below (lower number = finer).

Hello and thanks for joining us again for another month of tasty and interesting coffee.

For the November edition of the Dialled In Coffee Subscription we have gone right back the beginning to feature the wonderful Django Coffee Co. from Southport, Merseyside.

Alongside Django we are thrilled to introduce Dak Coffee Roasters from Amsterdam in Holland.

We are continuing the Black Cat theme this month, by bringing back Black Cat Coffee Roasters from Norfolk and then to round off the subscription we are featuring Outpost Coffee Roasters from Nottingham.

This month, we had another delayed production sample which meant that we couldn't get our finalised Dial-In settings for the Plot Colombia Micro-Lot in the booklet before it went to print. 

When roasters get a new coffee in they typically profile the coffee roast on a smaller scale sample roaster.  For freshly landed coffee crops or exclusive micro-lots (like the Plot Colombia this month), this is typically the sample that we receive to make a decision on the coffee.  The final scaled up production roast is often slightly different to this original sample we receive, and so we like to use this production roast sample to provide our Dial-In settings for you all.

For the October edition of the Dialled In Coffee Subscription we have decided to revisit some old friends in the shape of Horsham Coffee Roasters in Sussex, Plot Roasting in Woolwich, Crankhouse Coffee in Exeter and then we a featuring a new roaster to us - Crosby Coffee in Merseyside.

We have two washed coffees, a honey-processed coffee and a first for us - a Natural Tanzania.
